# 1 Monocultivar Coratina
Gran Cru 300
Our Gran Cru was born in a plot of land of about two hectares with 300 secular olive trees planted more than a century and a half ago with an ancient and traditional 8x8 planting. Here the Coratina cultivar is jealously preserved and cultivated.
Coratina is a native variety of our territory and has great adaptability and high productivity combined with high quality.
From this cultivar we produce an emerald green extra virgin olive oil with an intense fruitiness, rich in enveloping aromas and hints of tomato leaf, artichoke, spices. The relationship between bitter and spicy is decisive and harmonious.
Ideal pairing with legume-based soups and red meats.
# 2 Monocultivar Peranzana
Fior Fior
Fior Fior is the result of the need to create a "lighter" oil. Young olive trees of Peranzana between 15 and 30 years produce rare and valuable olives. This cultivar was imported from the distant Provence in 700 towards the northern area of Puglia and from here it derives its present name which is a dialectal mutation of Provenzale.
The resulting oil has a golden yellow color with green reflections and a light fruitiness with herbaceous hints of almond, green apple and tomato. The spicy and bitter notes are pleasant and balanced.
Ideal pairing with fish dishes and fresh salads.
